It has not only good emulsifying property but also high dispersibility. The Cardlo emulsified oil (CE I) is easy to use and make oil disperse better in processing, which help saving oil dosage. In addition, it can inhibit starch retrogradation, improving product processing performance and stability. For frozen rice and dough product, it can improve moisturizing and anti-cracking properties, obtaining excellent taste of final product. For pastry product, it can improve softness and inhibit surface oil-leakage phenomenon, extending shelf life.
